Dr. Alejandro Marangoni

Alejandro is a professor at U of Guelph in Food Science and a Canada Chair in Food, Health and Aging. His work concentrates on the physical properties of foods, particularly fat crystallization and structure. His research works toward the development of novel structured emulsions as a fat replacement and includes the development of oleogels. Alejandro holds more than 40 patents to this name.
